Autumn Classic: Homemade Apple Pie

As the days grow shorter and the air turns crisp, there’s nothing more comforting than the smell of an apple pie baking in the oven. Warm cinnamon and sweet apples come together to create a dessert that feels like home. 

At Ana Victoria Home, I believe in savoring life’s little rituals, and baking a homemade apple pie is one of the best. It’s not complicated, but it transforms an ordinary evening into something special. Light a candle, set the table with your favorite linens, and let the aroma of apples fill your kitchen.

It's became my number one favourite pie when my mom - Yolanda made it once when I was pregnant with Victoria. It takes only about an hour to make and it's big enough so that every member of the family can have a piece. She actually baked it with Vicky last week, and it was as delicious as always. 

It's a simple recipe - without the simmering or baking the apples or the crust And just 6 or 7 ingredients.

 

INGREDIENTS:

  • apples - sour apples are best - about 5-6 apples 3,5 lbs - 1,5 kg
  • wheat flour - 2 cups - 320g
  • butter - 7oz - 200g
  • 1 egg
  • sugar 3oz - 80g 
  • baking powder - 2 teaspoons
  • cinnamon/apple pie spice mix - 1 teaspoon ( optional )

What are the best apples for an apple pie? I prefer sour and hard apples that wont dry up to much and have a pleasant texture after baking. 

Step 1: Prepare the ingredients 

We start with the crust. In a large bowl add 2 cups of wheat flour, one cold average size egg, 3 oz of sugar, 7 oz of butter ( it's best to use cold butter from the fridge and cut it up into smaller pieces ). Last but not least 2 teaspoons of baking powder and an optional pinch of salt.

Step 2: Knead the dough and let chill in the fridge.


Use your hands or a food processor to knead the dough. We usualy do it by hand, it's best to do it fast. At first the dough might be too loose but if you keep at it will form a dense sphere. You can do it in a bowl or on the countertop. 

If you add to much wheat flour you can always add a spoon of cold water or sour cream. When you form a sphere secure it with food grade aluminum foil and leave in the fridge for an hour.

Step 3: Grate the apples

While the dough is chilling, you can prepaire your apples. 6 apples that weight about 3,5 lbs - 1,5 kg. Peel your apples, cut them into quarters, remove the seed nests and grate them using a grater. Leave the apples for about 20 minutes and let some of the juice seep out from the apples. After that time you can crush the apples by hand and remove the rest of the juice from them. Now is the time when you can add some cinnamon or the ready to go apple pie spice. 


Step 4: Prepare your baking tin. 

Portion your cust into two parts - put half it into the freezer and work with the other half.

At first prepaire your baking tin - use butter to apply baking paper. I used 7" x 10.5" - 18cm x 27cm baking tin. Cut the dough ( that's not in the freezer ) into stripes so it's easier to apply and knead it together. You can use water glass to even the thicknes of the dough.


Step 5: Apply the apples

Set the oven to 356 °F - 180 °C on top and bottom head.
Lay the apples evenly on the first layer of the crust. 


Step 6: Grate the crust

Remove the rest of the dough from the freezer and grate it over the apples. Harder dough will be easier to grate.






Step 7: Bake the apple pie

Last but not least- bake the apple pie. Now you are ready to put your pie into the oven. Choose the middle shelf. Bake your pie for about 60-70 minutes.
After it's done cooking make sure to let it cool for a while, after it's cooled move the pie to a kitchen grid.



You can serve it with fresh fruits like blueberries or mullberies and icing sugar, I love it best with chocolate ice cream. Serving it in a setting with simple cotton napkins or a tablecloth will turn the scene into something unforgettable.
